This common Thai street food, locally known as pad gra prow, is a stir-fry of meat or fish with basil, served over rice and topped with a fried egg for a double dose of filling protein. In this ground beef version, we’ve substituted basil leaves with an easy no-prep paste and, to balance out the mild heat of the seasoning, flavoured the fluffy bed of fragrant jasmine rice with the subtle sweetness of rich coconut milk.
